Homemade Vanilla Custard Ice-Cream (Alpha-Gal Friendly and Dairy Free)

I love ice-cream, and since being diagnosed with Alpha-Gal Syndrome it’s been a struggle. I’ve found over the years that sometimes you just have to make it yourself!

The coconut sugar brings in some warmer notes that are yummy – think caramel ribbon! I hope you enjoy this recipe as much as my husband, children and I do!

Homemade Vanilla Custard Ice-Cream (Alpha-Gal Friendly)

This super rich – custard style ice cream hits the spot if your looking for an indulgent treat. Because of the coconut sugar, it has some warm notes that are unique in the best way.

Ingredients

  • 3 cups Plant Cream (At time of writing this recipe, ‘Country Crock Plant Cream – Dairy – Free Vegan’ was listed green/safe on the FIG app for alpha-gal.)

  • 2 cups unsweetened oat milk (At time of writing this recipe, ‘Original Oatly Oatmilk’ was listed green/safe on the FIG app for alpha-gal.)

  • 8 large egg yolks

  • 2 cups coconut sugar (At time of writing this recipe, ‘BetterBody Foods Organic Coconut Sugar’ was listed green/safe on the FIG app for alpha-gal.)

  • 1 1/2 TBSP vanilla extract (At time of writing this recipe, ‘Watkins Pure Vanilla Extract’ was listed as green/safe of the Fig app for alpha-gal.)

  • Pinch of salt

Directions

  • Make the custard:
    -Heat plant cream + oat milk in a saucepan over medium heat until steaming but not boiling. Stir constantly and don’t walk away!
    -In a separate bowl, whisk together egg yolks, coconut sugar, and salt until smooth and a little lighter in color.
    -Temper the eggs: slowly pour a bit of the hot ‘milk’ mixture into the yolks while whisking constantly, then pour it all back into the saucepan.
    -stir over low heat constantly(don’t walk away) until it thickens the back of a spoon (around 170.’)
    -Remove from heat and add vanilla
  • Quick chill:
    -Strain the custard through a fine mesh sieve into a bowl.
    -Place that bowl into ice bath(just a larger bowl with some ice and cold water in it.) This will take about 15 min.
  • Churning:
    -Pour into your electric ice cream maker and churn according to your machine’s instructions(usually 25-30 min).
    -Transfer into an airtight container and chill in the freezer for a couple of hours for a more scoop-able texture, otherwise enjoy it soft-serve style!
  • Eating:
    Enjoy and top with your favorite alpha-gal friendly toppings!
