Creamy Mashed Potatoes (Alpha-Gal Friendly and Dairy Free)

If your’e looking for rich, creamy mashed potatoes that are safe for alpha-gal syndrome–this is it. No mammal ingredients, no dairy, just creamy comfort food. I’ve also include my go to kitchen tools and pantry staples I use every time.

These creamy mashed potatoes are fluffy, smooth, and great for a weeknight dinner or holiday turkey!

Ingredients

  • 4 large russet potatoes, cleaned, peeled and chopped

  • 1 stick of AG Safe plant butter, cubed. (At time of writing this recipe, ‘Country Crock Plant Butter-olive oil’ was listed green/safe on the Fig app for alpha-gal.)

  • 1 cup of plant-based milk, keep in mind if using oat milk you might need more because of high starch content. I prefer full fat oat milk in this recipe.

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • Salt and pepper to taste.

Directions

  • Place potatoes in pot. Add enough cold water to cover potatoes by 1 inch, making sure they are fully submerged for even cooking. Pro Tip-add pinch of salt to water.
  • Boil until fork tender (approx.15 mins).
  • Remove pot from heat and carefully drain potatoes and return to pot on a burner that is off.(Do not place pan with drained potatoes back onto heat.)
  • Mash potatoes using your preferred method. I like a good ole manual potato masher!
  • Add plant butter, plant based milk, and spices listed above and combine until well incorporated.
  • Remember to taste for salt before serving.
