Crispy Salmon Teriyaki Rice Bowls (Alpha-Gal Friendly and Dairy Free)

Crispy Teriyaki Salmon Rice Bowls (Alpha-Gal Friendly and Dairy Free)

minutesOne of the first fish recipes I mastered after my diagnosis was teriyaki salmon, and I know your family will enjoy this as much as mine do!
Ingredients
- Salmon
6 Salmon Fillets (about 6oz each or 1 whole side of salmon), remove skin and cut fillets into bite size pieces.
salt and pepper
1 TBSP onion powder
1 TBSP garlic powder
Approx. 1.5 cups of teriyaki sauce (try my Homemade Teriyaki sauce at this link)
Oil for frying
- Bowl Fillings
3 cups of uncooked rice (we use brown rice)
3.5 cups of chicken broth (or water) for cooking rice – (more or less depending on how you cook your rice. I use the instant pot, so please make sure you have enough liquid for your rice cooking method!!)
2 avocados, sliced and drizzled with lime juice to prevent browning (or just wait until serving!)
1 cup carrots, shredded
2 limes
1 cup cucumbers, sliced or quick pickled
optional: edamame, red cabbage, radish, scallions, sesame seeds, seaweed
Directions
- Start cooking the rice, my favorite way to cook any rice or grain is in the instant pot. I’ll link the one I use below. I find using the instant pot is quick, reliable, and hands off.
- Heat oil in a large skillet or cast iron pan over medium – high heat.
- Make sure you pat your salmon dry with paper towels, this is crucial to get the best crispy texture. Sear salmon for 3-4 minutes per side, making sure to get golden. Pro tip: do not try and turn salmon too soon, as it will flake and separate. (Internal temp of 145′)
- You have options about the teriyaki glaze. You can either
A.) Toss all salmon and glaze together to coat. or
B.) Drizzle overtop salmon bites and rice when building your bowl. - Build your bowls your way!
Scoop rice into bowls, add your veggies, avocado, and your favorite toppings. Place salmon bites on top. Garnish with sesame seeds, scallions, and lime wedges to your taste and enjoy!
