Fluffy Homemade Waffles (Alpha-Gal Friendly and Dairy Free)

Whether you’re making a weekend brunch or batch-prepping for busy mornings, these waffles are a family favorite in my Alpha-Gal kitchen!

Fluffy Homemade Waffles (ALPHA-GAL FRIENDLY)

Ingredients

  • 4 cups AG-safe all-purpose flour(At time of writing this recipe, ‘Jovial Organic Einkorn All-Purpose Four’ was listed green/safe on the Fig app for alpha-gal.)

  • 4 TBSP(1/4 cup) coconut sugar(At time of writing this recipe, ‘BetterBody Foods Organic Coconut Sugar-24oz was listed green/safe on the Fig app for alpha-gal.)

  • 2 TBSP baking powder ( At time of writing this recipe, ‘Rumford Baking Powder’ was listed as green/safe on the Fig app for alpha-gal.)

  • 1 tsp salt

  • 4 eggs

  • 3 1/2 cups plant milk (At time of writing this recipe, ‘Original Oatly Oatmilk’ was listed as green/safe on the Fig app for alpha-gal.)

  • 1 cup vegetable oil ( At time of writing this recipe, Wesson Vegetable Oil’ was listed as green/safe on the Fig app for alpha-gal.)

  • 2 TSP Vanilla extract (At time of writing this recipe, ‘Watkins Pure Vanilla Extract’ was listed as green/safe of the Fig app for alpha-gal.)

Directions

  • Preheat your waffle iron
  • In a large bowl, mix the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, then add milk, oil, and vanilla.
  • Combine wet and dry ingredients, gently stirring until just mixed. (a few lumps are okay.)
  • Cook in waffle iron until golden and crisp(3-5 min depending on how golden you want your waffle). Also, even though you don’t have to grease your waffle iron, I always do because it makes me feel better.)
  • Serve with maple syrup(At time of writing this recipe, ‘ Maple Valley Cooperative Dark & Robust Organic Maple Syrup’) was listed green/safe on the Fig app for Alpha-gal.), and fresh fruit!

My kiddos love mini waffles, so for fun we make them with a mini waffle maker!

I love this unbleached, ancient grain all purpose flour! – I know flour can be a hot topic online, especially when navigating alpha-gal. This specific flour is marked green/safe on the Fig app at the time of writing, and I’ve personally used it with success. That said – always do your own research, and when in doubt, don’t risk it. Everyone’s body reacts differently with AGS.
