Fruit Salad (Alpha-Gal Friendly and Dairy Free)

I love chilled fruity desserts in the summer, and this one checks all the boxes; sweet, tart, fruity, chilled, and easy to make!

Feel free to customize this to the actual fruits you have in your fridge!

Fruit Salad (Alpha-Gal Friendly)

Summer time means refreshing, bright, and cool desserts to cool us down(safely). We love a extra juicy fruit salad at our house, so feel free to half the sauce to your preference!

Ingredients

  • 1 pint of strawberries, washed and sliced

  • 1 pint of blueberries, washed

  • 1 fresh(yes, it does make a difference) pineapple; peeled, cored, and sliced

  • 2 apples(your choice, green or red), washed and chopped into bitesize pieces

  • 2 11 oz cans of sweetened condensed coconut milk, AG safe

  • Juice of 1 lemon(s), see below

  • 1 TBSP vanilla extract (At time of writing this recipe, ‘ Watkins Pure Vanilla Extract’ was listed as green/safe on the Fig app for alpha-gal.)

  • Sprinkle of cinnamon

  • Feel free to add seedless grapes, bananas, kiwi, etc!

Directions

  • Prep the fruit: wash, peel, and chop everything into bitesized pieces. Add all into a large mixing bowl.
  • In a separate bowl, whisk together:
    -Sweetened coconut condensed milk (Start with 1 can depending on how much fruit you have.)
    -Lemon juice (start with 1 TBSP, add more to taste)
    -Vanilla extract
    -Optional small pinch of salt
  • Combine by gently folding the sauce into the fruit until evenly coated.
  • Chill, optional but recommended. I like to give it at least 30 minutes in the fridge before serving.
  • Optional, but not at my house!
    – Top with your favorite alpha-gal safe granola

Notes

  • Full disclosure: The sweetened condensed milk I have used for over 2 years is listed yellow/maybe safe in the Fig app, so I will not be recommending the specific product. But there are green options listed and readily available, I just have not personally tried them.
