Mayo, with a hint of Mustard, Potato Salad (Alpha-Gal Friendly and Dairy Free)
My favorite potato salads were always at the church potlucks, and I have finally made it as close as possible to the perfect southern classic. In the war between mayo vs mustard, I say ‘why choose?’ This recipe is the best of both worlds, creamy with a little bit of tang.
Mayo, with a hint of Mustard, Potato Salad (Alpha-Gal Friendly)

hoursPotato salad is a delicacy in the south – unless you’re my mother, but we’ll forgive her. If you are looking something safe and delicious to bring to the grill out, you will love this southern classic!
Ingredients
5 lbs Yukon gold or red potatoes, peeled and cut into 1-inch chunks. (My Granny always used Russet potatoes so that is what I prefer, so use what you want!)
1 1/2 cups mayonnaise (At time of writing this recipe, ‘Best Foods Plant-Based Vegan Dressing and Spread Mayonnaise’ was listed green/safe on the FIG app for alpha-gal.)
2 TBSP yellow mustard (At time of writing this recipe, ‘Kroger-Brand Yellow Mustard’ was listed green/safe on the FIG app for alpha-gal.)
2 TBSP sweet pickles, chopped (At time of writing this recipe, ‘Mt Olive Sweet Gherkins’ was listed green/safe on the FIG app for alpha-gal.)
2 TBSP white vinegar
1 TBSP coconut sugar (At time of writing this recipe, ‘BetterBody Foods Organic Coconut Sugar’ was listed green/safe on the FIG app for alpha-gal.)
1 Tsp celery seed (or 1/2 cup finely chopped celery)
1/4 cup finely chopped onion (I prefer green onions)
1 1/2 Tsp salt (you will most likely need to add more at end to taste)
1/2 Tsp black pepper
1/2 Tsp smoked paprika (plus more for garnish)
Optional: 6 hard boiled eggs, chopped. Not at my house, but its a traditional add in!
Directions
- Boil the potatoes:
Place potatoes in a large pot, cover with water, add a big pinch of salt.
Bring to a boil, reduce to a simmer, and cook until fork-tender(10-12 minutes)
Drain and let cool slightly. - Make the Dressing:
In a large bowl, mix together
Mayonnaise
Mustard
Pickles
Vinegar
Sugar
Celery Seed
Onion
Salt, Pepper, and Paprika - Combine:
Add cooled potatoes (and chopped eggs if adding) to the dressing.
Fold gently to coat-do not mash! Keep it chunky and creamy. - Taste and adjust for salt, sugar, or vinegar if needed! This is your potato, if you like it tangier, sweeter or saltier, this is where you add it in!
- Chill:
Cover and refrigerate at least 2 hours, preferably overnight for full flavor. - Serve:
Garnish with extra paprika, sliced eggs, or chopped parsley if you want!
