1/2 head green cabbage, finely sliced
3 packs vegan refrigerated dumplings (At time of writing this recipe, ‘Nasoya Organic Vegan Thai Basil Vegetable Dumplings’ were listed green/safe on the FIG app for alpha-gal.) I find these at Walmart in the produce section by the tofu/fresh egg roll wraps.
Optional garnishes: sesame seeds, green onions, AG safe hot sauce, cilantro, etc…
Directions
- Preheat oven to 375ºF degrees.
- In your 9 x 13 baking dish, make the sauce. Combine coconut milk, red curry paste, minced garlic, rice vinegar, soy sauce, and sesame oil. Whisk until well blended.
- Slice cabbage into thin strips and distribute evenly in the coconut milk-curry mixture, making sure to submerge cabbage
- Arrange dumplings in the coconut milk-curry sauce, then baste them with the sauce we made in the baking dish before placing in oven.
- Place in preheated oven for 20-25 mins, until dumplings are heated through and the sauce is bubbling.
- Optional: Top the dish with one of the sauce packets that comes with the dumplings and add any garnish of your choosing! We are partial to one of the sauce packs, sesame seeds and green onions at our house. Enjoy!
