Whipped Honey Iced Coffee (Alpha-Gal Friendly and Dairy Free)
I’m going to be honest here, I’ve always thought of myself as a non-coffee drinker. But I wanted to add something for my caffeine lovers to the website. Well-I can now say I get it! This will be on rotation for mornings! Also- good to note- my husband rated this recipe 5/5 stars and he drinks coffee daily!
Whipped Honey Iced Coffee (Alpha-Gal friendly and Dairy Free)

Ingredients
1/2 cup organic raw honey (At time of writing this recipe, ‘Nate’s Organic Raw and Unfiltered Honey’ was listed green/safe on the FIG app for alpha-gal.)
1/4 cup hot water, NOT boiling
2 1/2 TBSP alpha-gal friendly instant coffee

Directions
- Using a stand mixer, hand mixer, or good ole manpower, whip honey on high speed for 5 mins. It should get lighter in color. (It might take a little more time if you are whisking by hand.)
- Add hot water and instant coffee to the whipped honey and mix for an additional 4-5 minutes. It will become light, airy, and fluffy- like a mousse.
- I found it easiest fill the chilled glass 1/2 full of oat milk and add 2 large dollops of the whipped honey-coffee mixture. Stir until well combined. Feel free to adjust the ratio to your liking.
- Add ice and enjoy. I sometimes like to add a little more oat milk at the end. This is one of those recipes I feel like I’m always fiddling with depending on my tastes that day!
- You can store in the fridge in an airtight container for up to 3 days-If you even have leftovers. If you do store it, make sure to stir it before using again.
